Brisket marinade recipe?

As an alternative to a dry rub, what marinade do you like to use on brisket? Intend to marinate overnight then smoke on charcoal tomorrow.

I use Italian dressing for 2 hours then dab it again right before the sear.

Make sure your brisket is small enough to fit in the microwave. You only make that mistake once.

I hate it when the plate is still spinning in the microwave, but the brisket gets caught in the corner, due to its rectangular shape. Air fryer FTW.

Nah, just dep fry it frozen. Works with turkey.

Not a fan of Italian dressing. I normally use a Cuban mixture a friend gives me but out of that. Thanks though.

That would be mojo and it's generally used for pork.

I do use it on pork. Works well on brisket too.

It's an amazing marinade. The Seville oranges make the marinade.

If I cut it in half, wrap it in foil, and then microwave it, that should work right? Asking for a friend.

Umami bomb marinade
Seaweed (kombu if you can get it)
Dried tomatoes
Garlic
Dried shitake mushrooms
Fish sauce
Soy sauce
Miso paste
A bit of parmesan regianno (I know it sounds weird, but go with it)

You can purchase the juice for the Seville orange part of the marinade. The international sections of most grocery stores have it.
Olive oil
Bitter orange juice
tons or garlic minced
salt pepper
dried oregano
finely chopped onion
