I hope they have proper storage tomorrow. Gonna be a lot of mud making later that evening.

I'm assuming he's referring to keeping the oysters cold and not let the heat get to them or there could be lots of folks with the flying shits by late afternoon.
I'm not big on oysters this time of year to be honest. They are usually too lean and the juice is often cloudy and not clear or as good tasting as cold months.

That is my issue with this..
If you are going to make the oyster the focal point why not feature it during a better season for them?
Crabs are in.. do that

Yep, crabs are great right now. I stopped to pick up a dozen on my way home from helping my sister-in-law over in Slidell earlier this week. The place was giving out 18 for the price of a dozen and they were about half and half male to female.
The females were loaded with that nice yellow and orange fat, and all the crabs were chock full of meat.

If you go into the restaurant, Jolie Pearl will also have West Coast (Puget Sound) and East Coast (Chesapeake Bay) oysters for sale.
I find the Gulf to be the best. The West Coast are really interesting. They look completely different and taste completely different.

New Orleans does their Oyster Festival at the beginning of June too. Doesn't make sense.

Isn't it like $75 a ticket?

It’s free. There is some vip ticket that you can buy, but as you say......frick all that.

I'm willing to bet new Orleans doesn't want to compete with Saints season..

I assumed they schedule these festivals during their slowest part of the year to try and prop up sales
