Boudin trail

Did part of the boudin trail . Hit Eunice poultry, Supperette, Mel’s, Tboys, and Pauls . Pauls Country style hands down was the best. He was in the store working. A fine man if I have ever met one. Mel’s was rated 2nd a Tboys 3rd.
We stopped at Ridell grocery and we’re sold out as well as Teet’s. Had a 2 hour detour to Fred’s Lounge for some Cajun music. What a day it was.

20 years ago, Superette and Eunice poultry had 10/10 boudin and the recipes were very similar if not identical. About 6 months ago, I had superette boudin for the first time in years and found it to be very subpar. Not bad, but definitely lacking punch.
Maybe it is the same and I have just evolved my palate around better examples such as Juneau’s and Mr Ts.

Next time try Charlies in Mamou, right off of LA.13..really good boudin, not wet at all.
If you want REAL old-fashioned boudin, you should try Guillorys in Pine Prairie! Crispy skin, dark but not too much liver and ground coarse. Just like when I was a teenager working at gas stations in Mamou. Great smoked meats as well.

Charlie’s hot pork sausage if incredible too-if you can get it. Have to call cause only made certain day and sells out.
Recently had Gory’s in Pine Prairie while visiting friends at a camp. It was delish. Tboy’s still my fav buy would take Guillory s any day.

Probably the only example of boudin on the Cajun prairie that I don’t like. They’re smoked pure pork and Tasso are on point however. Also, it is an otherwise great meat market and really good folks. I just don’t like their boudin.
