Need a recipe that would be similiar to the Acadiana area style. No liver please

I'm curious about a recipe and method too. I'm 3 weeks into to my sausage making career and boudin is not far down the pipeline. I certainly want a recipe that calls for liver though. A lot of it. Didn't know it could be boudin without it really.

Well u are??????just kidding. I don't know the amount of liver in a best stop dons or Billy's but it can't be much. In some areas it's so strong

I've never made it, but eat every kind there is.

I know it's pretty basic.
Liver, rice, trinity, and meat!
Which could be pork, beef, turtle, goat, alligator, dear, venison, polar bear, or chicken if nothing else is avaiable.

Try a 10# Boston Butt to 1# Liver ratio

True Cajuns want 5/1, but that is too much for most people.

Yes, Donald Link's is very good. Made it several times. Use pork butt. I would post recipe but I'm on mobile. I don't use liver either btw

Ordinarily I don't like liver, but boudin must have some in it
