Boston Butt Advice

I originally bought an 18lb butt on sale at Rouses on special and had the butcher split into two 9lbers. I was planning on smoking one this weekend, however, I am not going to have enough time. Am I sacrificing anything by splitting the 9lber in half and smoking two 4.5lbers?

The only issue is that it won’t be as forgiving for errors. Just make sure you keep an eye on the internal temperature.

Smoke for a couple hours then wrap in foil and it will cook fast. Only way to really speed up the process.

Sacrificing cook time, and really watch the IT as stated. Will cook much faster than you may be accustomed to.

You got an 18lb butt at Rouses? More likely you probably already had two 9lbs butts, they were just packaged together....
But to answer your question, not really. Do they have a bone in them? Cause that would make it tough to cut in half. Only real problem I can think of.

Wrapping in foil will cut down the cook time tremendously.
