Book recs for food history/culture/etc - not cookbooks

Anyone have some good recommendations for food books that aren’t cookbooks?
I’m looking for something I can read start to finish about the history of styles, dishes, cuisines, etc.
Ideally, Louisiana/creole/Cajun focused would be great, but not necessary.
May be some past threads about this. If anyone knows of one, a link would be great. I searched and am getting nothing but cook book thread results.

Yea I’ve seen that mentioned in some of the cookbook threads. I think it still just prefer a book-book.

Goodness what an open ended question. Many ways and derivations you can go. The recorded/history of creole and Cajun cooking is less deep and factual as you may find in a book. And less entertaining than just asking an old timer.
However I think anything by Ruth Reichl, Jeffrey Steingarten, Michael Ruhlman, Elizabeth David and countless others (including Bourdain) are great reads. The United States of Arugula is where you should start.

Find Kitchen Confidential by Anthony Bourdain. A compelling read about the chef/restaurant business. I think he had other books before he committed suicide.
