Bone Marrow

Never attempted to prepare before but always order it if I see it on a menu. Thought it would be a fun new challenge to try and cook.

You will probably not be able to find someone to cut them lengthwise, it is a bit of a pain to do yourself.
Soak in brine for about 24hrs.
Make a fresh herb butter.
I like to put all of mine (cut into about 3" loung rounds) into the black iron in a circle. Put about a tbsp of the herb butter on top of each bone. Cook at high temp (425 or more) for about 20-30 minutes.
Not the best pic. The bones were all standing to cook. I was possibly drinking.

The best advice I can offer is to consult an expert, and there is none more adroit that Chef Fergus Henderson.

Chris's Specialty Meat in P-ville has them cut lengthwise, Ivertine's in BR as well.
