boiling crawfish for the first time

Ok so this is gonna be my first time boiling the crawfish and I need some help.
How do you guys do it? We have 40 lbs and gonna be putting corn, patatoes, garlic, mushrooms and other things in it. What I need to know is when to put everything in, how much seasoning to use and how long to cook and soak.
I like them with a lil spice but not enough that I need a gallon of water for every few crawfish.

1)Boil Water- Adding 1 bag of Louisiana Seasoning. (Add a little concentrate for extra seasoning)
2)Add lemons, Potatoes, Garlic and Onions- I think about 10 mins will do
3)Add crawfish- easiest way to do it to keep in about 5-10mins until the crawfish are floating
4)Turn off burner, add mushrooms and corn and Allow crawfish to soak until they sink
The boil til they float and soak until they sink method seems to work pretty well for me

Use a large bag of shrimp and crawfish boil, I think it's a 4.5lb bag, and also put in about half of small bottle of liquid crab boil and a quart of lemon juice with a container of Morton's salt (3 or 4 cups). Start boiling water. Put your potatoes, onions (cut in half) and garlic into the pot in the beginning when you start heating the water. When the water comes to a rolling boil, throw your corn in for a minute (if frozen, if fresh-put it after you've boiled the crawfish with the rest of the fixins), then put your crawfish in. Let the pot come back to a boil. Boil the crawfish for a minute or two, then kill the heat. Add a pound of butter, and the rest of your fixins along with a bag of ice. Give it a good stir. Close the pot and soak for thirty minutes. Done and done.

2)Add 8 lemons, 8 Garlic (with tops cut off) and 6 Onions (quartered)- I think about 20 mins will do then add 3 lbs Potatoes, 10 minutes before putting in crawfish.

I have never heard BOIL til they float and soak until they sink. I have always allowed them to sink and started tasting when they do until they get to the spice I want.
PS- I would squeeze in 4 oranges when I put the lemons, garlic, and onions in.
I agree with Duckman13...I just tried to add some numbers to his recipe.

That's way too long to boil crawfish. Bring crawfish to a rolling boil (steam coming out from under lid). Boil for about 3 1/2 minutes. Turn off buner and let soak for 15-20 minutes

I put my seasoning (onions, garlic, lemons, zatarain's, liquid crab boil, little extra cayenne, etc) in with my potatoes first and bring to a rolling boil. Boil seasoning for at least 10 minutes.
Then I put my crawfish and mushrooms in at the same time. You could put your corn in too.
Return water to a rolling boil. Boil for about 3-4 minutes covered(see above). I usually put my corn in after I cut off burner because I hate when the corn gets mushy.
Don't forget to clean your crawfish good before putting them in the pot.

That is how I cook them and my guests have never complained. If you candy asses can't handle it then eat lutefisk and mashed peas instead of crawfish.

I was at a crawfish boil today where they added some avocado, pineapple, sweet potato and asparagus as well... Came out surprisingly good.

Not sure what size bottles of liquid crab boil is used but I also use 1 16oz bottle to supplement my boil but I would never use 4 bottles of it. Too much liq crab boil makes it come off on your hands and Im not a fan of the flavor if its used too much. 1 bottle of tabasco just seems like a waste of hot sauce as well as the olive oil.
One thing that is VERY important in boiling crawfish that way too many people skip.. Cooling the pot.. Either dump a lot of ice in there or frozen jugs and spray the pot with a hose on outside of pot prior to soaking them. This will produce juicy crawfish and allow the season to soak in. Its kills the cooking so you dont have overcooked crawfish.

How does the joke go - if you ever get hopelessly lost in the woods and are in need of rescue just find some crawfish, start a fire and put a pot of water on to boil. Within five minutes you'll have a dozen folks come by and tell you what you're doing wrong.

I have always heard that for every 10 cajuns there are 40 crawfish boil recipes.
