Also I love sausage that's been boiled in crawfish seasoning. The sausage plumps up and the casing has a nice snap. Literally nothing to complain about yet every crawfish season we have people claiming that one pound of sausage ruins 40 pounds of crawfish.

Who cares? No one is doing this in a crawfish boil. It's there already, might as well just toss the sausage in.

It’s a convenience thing for me. If I’m boiling crawfish and decide I want some sausage I just boil it instead of lighting the grill. I don’t boil sausage any other time.

Likewise, if I’m grilling sausage and decide I want some crawfish I just grill the crawfish instead of lighting the boiler. I don’t grill crawfish any other time.
