I’m of the cut the fire at first puff of steam and let them soak/cook till they sink,taste right, or start to get over done. I feel not boiling them for long periods allows a longer soak before over cooked.
Oh...and you better not use no jar roux...make that fresh before you dump it in.

Bring back to boil and boil for 7. Cut the fire, take them out and dump half in an ice chest. Put some cayenne pepper and salt on them, then dump the rest and add more salt and pepper. Add a little boil water to keep it moist, stir with the paddle, then close the lid. They will be hot and ready to scoop out for about two hours. Just scoop what you are going to eat quickly, so you can keep serving hot crawfish as more people come through.

We boil them for 5-7 minutes too. I do catering jobs all the time, we always do them with boil time of at least 5 minutes. Never heard of this no boil method people use on here

make sure your roux is room temp
adding it to boiling water will cause it to separate... the oil will make your crawfish easier to peel

I think this is where the confusion comes from. Do you mean back to a rolling boil or when small bubbles and steam are coming up?
