I've see a number of links to websites posted that have a lot of information dedicated to smoking brisket, pork butt, sausage, etc.

I can't seem to find them. Can someone point me in the right direction. TIA

I'm really looking for step by step instructions on how to build the correct fire.

I maintain heat control via water soaked chips/shavings in a variety of flavors(apple, pecan, etc..)

What I have found helpful is to catch wide temp swings ahead of time to make small incremental changes.

I also ran my smoker "dry" 3 times before I ever put meat on it.

BBQ Guru, if you plan on smoking a bunch, just buy one it will pay for itself by not wasting meat.

Best to follow others that have the same type/brand of grill/smoker you have. They may have specific ideas on using that same cooker.
