Best way to keep pastalaya warm

For parade Saturday night. Am cooking at house in BI pot. Should be done around 430. Parades not till 6. No fires where we are at for chafing dishes

Put it in aluminum trays and put the trays on your car's exhaust manifold. Keep the car idling during the parade.

Bring a charcoal pit out to the route and use it to keep the pastalya warm.

I use a Kenylon Plastic Oven Bag and inside of an ice chest...will keep it hot for hours. You may be able to find them at your local resturant supply store. LINK

I haven't done this with pastalaya, but I have with some other dishes. I boil some water in the microwave in a large pyrex measuring cup. Sit the cup on a towel in an ice chest for a while to warm up the inside of the ice chest. Then, when the pastalaya is ready to be packed in the chest, take out the water and place it in the ice chest. Don't open it until ready to serve.

You could keep it warm in an electric roaster. I don't know how much you have. I bought an 18 quart at Sam's some years ago for about 50 bucks.

We have 2 and use them all the time. One is probably 40 years old and one is a couple. This 22 quart is about $70 and the 18 quart is $50. These are handy to have. Can make soup in the too.

I use mini a lot also. It's great for making an overnight chicken, beef, pork/ham stock.

Those old School Nesco roasters also make a fine turkey.
A crockpot, preheated with hot water, then set to high until it’s hot, will also work to keep the pastalaya hot if you have electricity.

put bricks in oven at 350 degrees for about an hour

put newspaper in ice chest then layer in the bricks

place jambalaya pot in oven to warm it up then put in ice chest with bricks. it works like a sauna and traps the heat so it will stay hot as long as you dont leave the ice chest open.
