Best way to brew sweet tea ?

I am addicted to sweet(er) tea & not that abomination unsweet tea. I've always noticed that the best teas are brewed with hot water. But what I hate is when restaurants brew it hot, then as soon as it's ready they serve it in a cup w/ ice that melts by the time it arrives at the table. And of course, it's no longer the right taste because it's too watered down.

How can we fix this?
