I have zero evidence, but I think it's a socio-economic thing. The poorer you are the more salt you use, look at Tony's location. But having gone to many public dinners and eaten in almost every venue, I have noticed that poor=salt.

BTW, I crave me some Tony's.

fried oyster is my go to poboy. best i have found in area is Don's seafood on airline. not on menu so you have to ask. not cheap but very good.

The ones I've gotten from Poor Boy Loydes have been excellent.

The best I've ever tried were at Buster's Place next to the Green Room in Mandeville.

Pastime under the bridge has a decent Oyster Poboy. Not the best in the world, but decent enough when drunk.
