If I bought a whole tenderloin, cleaned it up and cut into individual filets, will they freeze well using a food saver? In most cases, I would probably cook half of the filets, and freeze the rest for cooking at a later meal. How much will freezing individual steaks and defrosting at a later date effect the quality of the filet? Anyone do this regularly? TIA for your feedback

They'll be fine if vac sealed. I freeze them from time to time, but before I vac seal, I put them in the freezer and let them get pretty frozen, so the vac seal doesn't squish them.

Not necessarily for meats, but I will also freeze stuff prior to bagging it. Veggies will clump together in the bag and be one big hunk when you try to thaw. Now that I think about it, I do the same with chicken breasts. Put them in a pyrex baking dish in the freezer for a couple of hours with saran wrap over the top. Then when they start to get hard, put them in freezer bags so they don't stick together. With the okra I've been freezing, I slice it up and put it in a freezer bag. An hour later I take the bag out and shake it some so they don't stick together.
