Bayou Teche Brewing and Cajun Saucer owner wins Louisiana Seafood Cookoff

SLIDELL, La. (NEWS 15) — A chef from Acadiana is now culinary royalty, representing Louisiana with pride. Karlos Knott, of the Cajun Saucer restaurant in Arnaudville, took the top honor at the 18th Annual Louisiana Seafood Cookoff in Slidell. He was crowned the Louisiana Seafood King.

Knott competed against 11 top chefs, showcasing his unique culinary skills. He crafted a Roman-style pizza, infused with Louisiana flair, topped with champagne-poached shrimp.

"Whenever we ate out, it was always seafood. Like Good Friday or a family event, it was always seafood," Knott said, reflecting on his culinary journey.

His winning dish featured a rectangular pan pizza with a special blend of local ingredients.

"And we're topping it with Louisiana shrimp, poaching them in butter and champagne," Knott explained.

"So, I want to give you guys a pizza to go — brachlet cheese, granchollay, champagne-poached shrimp, and a little salad on top. They treat pizzas like open-faced sandwiches," Knott noted.

The judges awarded first place to Knott, acknowledging his exceptional creation.

He will now represent Louisiana at the Great American Seafood Cookoff in August in New Orleans, where the competition will be even fiercer.

Karlos is a good dude. Always enjoyed visiting with him when I used to pass by the brewery. Still have yet to try their pizza, as it’s been years since I’ve been able to return.

You're missing out brother. Sunday afternoons there with the family and the cajun jam is my happy place

Chef was perhaps inspired by Johnny's Sweep the Swamp (topped with crawfish, shrimp, crab, andouille sausage, bell peppers, onions, jalapenos, Cajun spices, and mozzarella cheese)

I'm not a fan of seafood pizza, but I know people who love the Sweep the Swamp.
