Neither catfish or basa would make my top 15 fish to eat, I'm not sure why it's so popular besides being cheap

I mean it doesn't make sense to ask why a restaurant chooses to buy a cheaper fish that nobody can taste the difference in vs the more expensive counterpart.

If I give you two products and there is no discernible differerence and you choose to pay 4-5xs, then you’re a fool. Unless you just want to support Louisiana industry. That’s your choice how you spend your $$$.

At the height of the "catfish war", U.S. catfish farmers and others were describing the imported catfish as an inferior product. However, Mississippi State University researchers found imported basa were preferred three-to-one to US catfish in a small blind taste test

Haven't researched the fish a a long time...Once most true Basa was kept in country, Vietnam, China, etc. Some was imported to the west coast and other areas with high density Asian populations who demanded the best. Swai,(and others) of less quality was shipped to everywhere else. There is a Basa brand of frozen fish. Read the label. Many restaurants serve this stuff. The imported fish is easy to recognize when laid side by side with US farm raised. The raw filets look different...including shape. Fried it's pure white where US farmed will show some color and mud lines. This fish was thought to be spotted at Mr. B's...not by me.

Well, Chinese crawfish are cheaper, too... I just choose to support Louisiana crawfish farmers.
