The largest concentration of food trucks are on North Street downtown during lunch. Not sure about dinner times.
LSU will also have food trucks parked outside of Patrick F. Taylor with Curbside, Fete au Fete, and The Big Cheezy during lunch hours.

Perkins Rowe does a food truck roundup one Friday every month.
There's also an app called NOMAD where it tracks the locations of some of the BR trucks so you know where they are parked.
I haven't tried many food trucks, but my fiancé and I tried The Big Cheezy recently and it was delicious.

alexanders has 4-5 food trucks pretty often on a thursday or friday night.
