Baked Mac & cheese

I recommend making your own cheese sauce using sodium citrate.

Here's a recipe I like to make in the smoker a lot. You can just replace the smoker with the oven.

Smoked Mac & Cheese

Ingrediants:
2 Tablespoons Butter
2 Tablespoons Flour
2 Cups Heavy Cream
1LB. Extra Sharp Cheddar (shredded)
½LB. Monterey Jack (shredded)
2 Tablespoons Hot Sauce
2 teaspoons All Purpose Seasoning
1 Cup Mayo
1 Cup Sour Cream
12oz Elbow Macaroni Noodles
1/2 Cup Panko
12oz Thin Sliced Bacon

Preparation:
Cook Bacon 400º Oven 10-15Min and Chop
Boil Noodles Until Almost Cooked
Cook Butter and Flour (roux) in Sauce Pan Until Nutty
Add 1/2 cup of the heavy cream and stir until sauce thickens
Add an additional 1/2 cup of heavy cream and stir for 1-2 minutes
Add final 1 cup of heavy cream and stir until sauce is smooth and thick
Add Grated Cheese, Stir till Smooth
Add Hot Sauce
Mix Pasta, Sauce, Mayo, and Sour Cream
Pour into cast iron skillet
Mix together Breadcrumbs and chopped Bacon and cover the mac and cheese
----------------------------------------------------------------------------------------
Smoke
2Hrs at 240º
Check Half-way Through

You can put in the oven at 350 until the top is browned

Roux with butter
Add milk
Reduce to medium heat
Add cheese
Mix in cooked pasta and stir
Transfer to baking dish
Top with breadcrumbs
Bake at 350 for 15
Broil until browned on top

We usually make with IP w/ shredded cheese and it’s smooth and delicious..

Package of elbow, 4 cups os water, salt , 5 mins, quick release, add cheese and heavy cream and gotogo.

Instant pot .. I say that generically for pressure cooker. We use a Ninja and air fry with extra cheese at the top for the last step to crisp it up. PC’ing the mac n cheese comes out perfect every time.

The MOST important thing, do not use pre-shredded cheese, shred your own. The stuff that’s already shredded has a powder on it that will break your sauce every time
