Im usually on the hummus train but I had some baba ghanouj at Lebanons the other week that was really good. Ill order that from here on out when im there.

I use this one. If I don't feel like cranking up the charcoal grill, I'll slightly toast/blacken the Eggplant skin on the gas burner stove top then roast in the oven. And I use a food processor to mash/ mix everything rather than a bowl as this recipe does. Don't worry too much about removing the eggplant seeds. Also, I've never used the kalamata olive brine. Finally, I will taste and add lemon juice, cumin and salt as needed at the end.
