Chef Rob. I first had your Q at your place on Jackson. Fell in love with your brisket and have been on a mission since to perfect my own. I use a big geen egg, indirect heat. Thoughts on fat side up or down when cooking brisket?

I'm with Batman. OP is a douche getting his rocks off on all slob knobbing. What's even funnier is "chef" (pfff) claimed it wasn't the food that shut his restaurant down. I'm pretty sure every failed restauranteur EVER says the same exact thing.

Hey we had a really good guy on here a bit ago that does competition BBQ and talked about the differences between that and what you would either cook at home or pick up at a restaurant. Said the stuff in competition is so over the top you could only eat a bite? Similar experience ?

People drove miles and waited in line for hours for my food, can you say the same? I was proud to use local fresh products. I was known for my brisket BTW but you were probably still in High School back then.

I never competed and most bbq there is about as good as most festival food sub par.
