Anyone used Beef or Veal bone stock for gumbo?

I was wondering if anyone has used beef or veal bone stock for the gumbo as opposed to chicken stock and how it turned out?

I have a bunch of extra veal bone stock Im debating to use that instead of chicken stock.

How is this even a question? If your main protein for the gumbo is compatible with the flavors of your stock, go for it. What kind of gumbo are you making?

I have not. I’ve never made a beef gumbo or thought about a beef stock for gumbo. Might be darn great though.

We had a bunch of Pho catered so I have all this extra stock and was thinking why not toss it in gumbo?
