Anyone prefer sear/broil to grilling steaks at home?

The best steaks I've cooked personally were seared in a cast-iron skillet and broiled to finish.

Nothing against grilled steaks at all I love a steak that's grilled well, I just feel like you cook it in natural juices and and it's easier to get the proper temp throughout the steak (prefer filet or ribeye fwiw).

I know a lot of great cooks who love MR steaks that grill them to M-MW every time because a direct flame is difficult to grill with regarding steaks.

*I owned a grill for a long time and felt like that's the only way to cook a good steak, but my grill had issues so before replacing it I started trying new techniques and have found of the sear/broil method to be my favorite way of cooking steaks now.

I like both, but I definitely get more consistency through the the sear/broil method.

I tried reverse sear once, but I used a faulty thermometer and wound up with a medium well filet

Searing on cast iron is inherently superior to grilling. More surface area contacts the pan so you get a better Maillard reaction.

Sure, there's an argument that you may just prefer cooking on a grill, and that's fine, but you can still put your cast iron skillet on the grill for the same results.

I never tried the sear/broil method but I'm sure it turns out a great steak. I just can't get away from reverse sear. Perfect doneness throughout with a nice crust is hard to beat.

i love both... I do think ribeye is better on grill.. filet is better on cast iron as well as new york..but that ribeye is amazing on grill

I can go either way, but really like being outdoors having a cold beverage and standing by the Egg and getting all those smells.

Always grill. ~ In a hurry, over lump charcoal. ~ Planned ahead, wood burned down to coals.
