I use LA blue bag for big full fillets. If you are frying up more nugget or smaller fillets, the blue bag can be over salty. In that case I mix 2 parts blue bag with 1 part orange (unseasoned) bag. (Not to be confused with red bag which is extra spicy)

Zatarains seasoned with lemon or Louisiana New Orleans style (yellow bag).
These have less corn meal and make for a more tender bite. I like a lot of different fish fry mixes to include the ones I just listed. Although I will note that I find these two aren’t as good when frying very large quantities and filling a pan. They can get soggy or at least lose their crispiness when stacked up.
