Anyone here use coconut oil for roux?

I was drunk last night and decided I wanted to make a rice dressing and realized I was out oil. Found some coconut oil and made a quick small roux in the microwave. Found it cooked in less than half the time of regular oil and didn’t notice a difference in flavor.

Sounds decent. I like vegetable oil with a little sprinkle of duck fat.

Was it refined or unrefined? Just curious, because I'd think unrefined would still taste kind of coconutty (if you will)...

I’ve been using peanut oil. It works fine.

I'm going to use some pig fat tomorrow and see how that goes.

I use bama tears for my roux and it worked out great.
