I never worked there, but two of my college neighbors did(1989-1990). They were definitely not pre-breaded back then. In fact, the slices were way too thick and didn’t melt through all the time. They started cutting them slightly thinner to get a better product.

Hmm. I always just bought string cheese and breaded and fried it. I thought that is what everyone did.

Pre-2016 are the ones I was talking about. Someone claimed to have the recipe and would post it. Never happened.
I actually copied this from here, years ago. Don't remember who provided it though, but it works.

I was the fry cook there for a few months in the mid 80’s. Everything was prebreaded and frozen.

My SO worked at Sammy's back in the 90s and we have a binder full of recipes, fried cheese included.
