you want it more vinegary or more mustard. the sauce depends on which part of carolina you are from (i had a roommate from there who explained this to me

its basically:

apple cider vinegar
a little ketchup
red pepper flakes
worchestire(sp?)sauce
garlic
honey

thats the basics of it. i mess around with it and add different things here and there but the above are my staple ingredients.

i also like to heat it on low for a little while, but its not necessary.
