Combine ground beef and ground pork and that will be a good combo.
Have you ever added mirliton or eggplant? Both are great additions to rice dressing.

That's what I came to suggest. Make it the way you usually do, but with that mixture of meats. Stir in some fresh chopped parsley and green onions just before serving.

Being literal to the post, you can make dressing with chicken hearts and gizzards. Plausible deniability.

Wild Rice Dressing
1 cup onion, diced
1 cup celery, diced
1/4 cup green bell pepper, diced
2 teaspoons garlic minced
1 pound pork sausage cooked - I like Jimmy Dean with sage
1/2 teaspoon cayenne pepper
1 teaspoon Cajun seasoning
1 teaspoon black pepper
3 boxes wild rice mix (with seasoning package)
beef stock (per wild rice box directions), less 1 cup
1 can mushroom soup, plus 1 can beefstock to rinse out can
Green onions, sliced - for serving.
Cook pork sausage, then vegetables in sausage oil - add a tablespoon of butter, if needed.
Add all other ingredients, stir and cook in oven with lid, at 350 degrees F until somewhat dry and wild rice is tender. May take 30-40 minutes.
Top with sliced green onion
