Anyone cook with pomegranate molasses?

I have seen it as an ingredient in many Persian recipes but have never found it in a store. I found out an Indian grocery store me was starting to carry a lot of Middle Eastern ingredients to I went by over the weekend and found they had the pomegranate molasses for $3.49 a bottle. Thinking of making a glaze for Cornish hens this weekend but looking for additional ideas.

Yes--I keep a bottle on hand. It is a sweet/tart flavor; I've used in salad dressings and bastes/glazes for meats.

Use it in muhammara:

Ingredients for 6 portions:
1 cup roughly chopped fire-roasted red peppers (peeled, seeded)
1/4 cup olive oil, divided
1 1/4 cup raw walnut halves
1/3 to 1/2 cup fresh breadcrumbs
2 garlic cloves, crushed
2 tablespoons lemon juice
2 teaspoons pomegranate molasses
1 teaspoon salt, plus more as needed
1 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon cayenne
1 teaspoon Allepo or other red pepper flakes
Italian parsley, chopped walnuts, and pepper flakes to garnish

And in making grenadine syrup:

16 oz pomegranate juice
16 oz sugar
2 oz pomegranate molasses
1 tsp. orange blossom water

My in-laws are Middle Eastern and they frequently sprinkle pomegranate on top of the hummus. It's pretty common.

Yotam Ottolenghi apparently uses it a lot. Christopher Kimball is always talking about how well it works in those recipes,

I have a bottle but have only used a little. It has a lot of punch.

Yes. Made a Pomegranate Eel Sauce for a sushi special one time. You could put that shite on EVERYTHING!

It's good as a glaze on roasted carrots.
