I have a pound of Carolina Reapers I am planning on putting on my electric smoke to make a batch hot sauce rather than cooking inside and having to evacuate the house. I was thinking of using a milder wood like apple and doing them at 2oo for a couple hours. Would they be fine in an aluminum cooking pan? Cut in half with open side facing up? Any tips are suggestion are appreciated.

I smoke red jalapeños to make Chipotle. I use pecan because that's what I have in abundance. I smoke them whole and just watch them carefully. Sometimes it only takes a couple of hours to dehydrate them, which is what I am shooting for. Sometimes it takes 4-5 hours.

ETA: I also roast hatch chili peppers which is over dire t flame. When I do this I am trying to not dehydrate them. I roast them whole over charcoal and freeze them in batches to use later in the year. I peel the skin before using like roasted bell peppers.

When you do it, you wanna stand right above them, preferably in the smoke and take deep breaths.

Funny that you say that. When I searched "smoking carolina reapers" the first result was some idiot that put one in a bong and did a big rip. Thought the guy was going to die.

Been smoking lots of ghost peppers lately to dry them. Adds a great flavor and you can use them in lots of different ways
