Any advice on cooking a "dino rib" without a smoker?

I bought one a while back and it's been in a vacuum sealer in my freezer for a while. It's defrosting and I was going to cook it tomorrow. Thought about just braising it in a small dutch oven.

Yeah look up any braised short ribs. Cook it like a pot roast basically, could make po-boys out of it.

Suppose I should have specified it's just one big rib for my fat arse

What you're suggesting is really similar to how I would do a big batch of short ribs and I really like that style. I should probably just go with that.
