Anyone has a good recipe for making Andouille?

I'd start with YouTube. Made it once but forget the recipe. Turned out really good.

The good smoked andouille I get from Bailey's in Laplace only uses the synthetic casings that have to be cut off the sausage prior to cooking.
That crap you buy in the supermarkets made by Savoie and Richard's used real casings that can be cooked without removal.
There is a world of difference between the Bailey's and supermarket varieties though.
ETA: OH LOOK, the owner's of Savoie's and Richard's just downvoted my post.

I was told they use beef middle casings. But when you peel it off the texture feels more synthetic than beef middle casings.
