I would pair it with beer if eaten as is. I normally pair it with beans or chicken in a gumbo.

We ended up with a slightly chilled Petite Syrah, and accompanied straight up grilled andouille with a squash and sweet onion risotto, and a green salad.

Good choice, slightly better than a zin as the spice in a zin might battle with the suasage.
