An Ode to Biscuits
Not much more than some milk and some flour,
Mixed with lagniappe and thrown in a pan,
Every baker opines,
on the temp and the time,
But the results, delicious, hot damn!
You can have them with butter or honey,
Jam or jelly, hell gravy is nice,
Baked in trays by the dozen,
Feeding kith, kin and cousin,
You can’t beat ‘em to eat, for the price,
As it goes, they’re a staple for breakfast,
But you know, they go quite well with lunch,
Lord knows I could be thinner,
But I’ve had them for dinner,
And sometimes at midnight, for a munch
As a place you can ladle out gravy,
As the ends of a sandwich, they’re grand,
Used to sop up your plate,
Well they do that just great,
And what’s better, they fit in your hand,
Now don’t leave ‘em too long in the oven,
But I’ve eaten ‘em burnt on the bottom,
Who cares what they’re made of,
If they’re made out of love,
Then you’re lucky, there’s those who ain’t got em.
Cause good biscuits taste just like a mem’ry,
Mixed by hands in a time that’s long gone,
Maybe now they can’t bake em,
But you? You can still make ‘em,
And their recipe’s how they live on,
If life’s menu seems so overwhelming,
And you worry yourself if you risk it,
Don’t fret and don’t frimple,
Just start somewhere simple,
Get mixin’ and bake you some biscuits

Now buttermilk biscuits, here we go
Sift the flour, roll the dough
Clap your hands and stomp your feet
Move your butt to the funky beat
Don't make a difference what food you make
Use buttermilk biscuits to clean your plate
You eat 'em in the morn', you eat 'em at night
Kentucky Fried Chicken makes the suckers just right
Sir Mix-A-Lot

Growing up my mom never made biscuits.. we only had toast. But when my parents would have an argument my dad had to cook for us.. That's when we had breakfast for dinner. He would mix some bisquick and plop it down on the baking sheet. He wouldn't mix it so well because there were pockets of flour.. Lots of butter and crunchy.. We called them moon biscuits. Everything was cooked well done.. Sausage jerky and fried eggs that were hard.. Believe it or not it was good memories.

My mom didn't make biscuits. She didn't like to cook, so we only had "whop" biscuits growing up.
My wife, however, comes from a long line of fine biscuit makers. She doesn't make them often, but she makes them well and she makes enough to have both savory biscuits and desert biscuits, and then have a mid morning biscuit nap.

Old school. A buddy and I were the first people in my hometown to blast out Sir-Mix-Alot on 12s in his lowered all black Chevy S10.. We were the first to get It Takes Two on cassette.. oh the 80s...
Didn't take long for those songs to get popular.
