I went today and got a 19.6# brisket from Rouse’s, to grind up.
It yielded 11.5 lbs of lean and 8 pounds of fat.
I made 80/20, total of 14+ pounds.
At the beginning of Rona, Albertson’s had Canadian brisket on sale.
A 19# brisket yielded 15+ pounds of 85/15 (13+ pounds of lean)

It's crap compared to what I can get at a decent meat market for the same price. Rouse's Ribeyes are especially abhorrent.

Yeah Rouse's meat is pretty terrible all around. They can't even make ground meat correctly. It's entirely too course.

I like their butcher counter but I usually don’t buy their stuff in the coolers. I do agree, their aged ribeyes aren’t all that. I buy most of my beef at Costco.
Calandro’s has the best beef in BR, as far as a grocery store goes. Maxwell’s is just as good as Calandro’s, but I consider that a specialty market, not a grocery store.

I've been pleased with Rouses beef probably 90% of the time. That said, there have been many times I've looked at the "prime" and even "choice" cuts in their display and chosen not to purchase.

Can you give some examples of which "decent meat markets" you shop? And while you're at it, which Rouses? I've been in a few different Rouses and noticed difference in visual quality at least.

Not sure about him, but for me, Calandro's is where i get most of my meat. Other than that, Alexander's, Fresh Market, Iverstine Butcher, Tramonte's are all good.

You got more lean off the Albertson's Canadian because it was equivalent to Select or worse. The Rouses' brisket is Choice. It should do better on the smoker and not dry out like the Albertson's brisket did.

I try to avoid getting meat from Rouses as well, but the brisket was $1.99 per pound.

I can’t find them, but I had photos of the Alberton’s brisket. It was just as marbled as this one. Just this one seemed to have a bigger fat back on it

Options are limited in Mandeville, but I get my beef at Saia's and my sausage at Bergeron's in Covington. I get all my skirt steak from the little Mexican mart. It's the best options without having to drive out of town.

Agreed. Don't sleep on Iverstine's either. Can't beat Costco for the money.

I did the same thing ( bought two) and was somewhat disappointed.) I swore of rouses meat a long time ago but these were packers. So all things considered at $1.99 for Black Angus choice not a bad deal in todays climate. I did buy a prime brisket at Sam's on Monday @ $2.49.

This is the correct answer. I only buy from the butcher counter there.

I got one of those Albertsons briskets but I knew it would probably be dry if I smoked it. So I did like you and cut it up based on weight. I just cubed it tho I like to grind the meat and use it then so it doesn't compact.

Are you using a chamber vac? If so witch one?
