Albasha Chicken Shawarma Recipe?

Does anyone have any insight as to what ingredients go into the Albasha Chicken Shawarma?

They use a fairly normal shawarma seasoning. Sumac is they key ingredient. Coriander, Black pepper, Paprika (allspice, cloves, nutmeg, cinnamon also possible) etc

Go to the Red Stick Spice Company and they sell the Chicken Shawarma rub to use on chicken.

Yeah it might be the best salad dressing anywhere.

Wish I could say I knew. I just buy premade at the middle eastern stores.

Chicken Shawarma

1/2 cup EVOO
Juice of 1 Fresh Lemon
6 Garlic Cloves, minced
2 tsp kosher salt
1 tsp cumin
1 tsp coriander
1/2 tsp black pepper
1/2 tsp turmeric
1/4 tsp cinnamon
1/4 tsp cayenne
1/2 tsp smoked paprika
1 white onion sliced
2 lb boneless skinless chicken thigh

Put everything except onion in a ziplock bag with chicken. Marinate overnight. When ready to cook, slice onion and sear chicken on high heat until cooked. Serve with rice pilaf, hummus. Etc.


ETA:
I don’t use sumac. Should I?
