A thread about white beans..

What's your go to bean- Great Northerns, Baby Lima, Navy bean, White Kidney, other?
What parts of the trinity make their way into your pot? And other veggies/herbs?
What kinds of Meat(s)- Bacon, Smoked sausage, smoked hock, turkey necks, other?
Any other adds or methods that elevate your white bean?
Making a pot to go with a jamb this weekend and wanting to see what other folks do.

Great northerns. Trinity + garlic in bacon grease. Tasso, ham, and 1 ham hock per bag of beans.
I think the ham hock is absolutely essential. The difference in flavor with it as opposed to without is so much deeper and "piggy".

Nice. I've always used just onions or onions/celery. May try adding bell pepper to the mix.

All, plus garlic, plus minced jap peppers, plus parsley and green onion

I do that + some pickled jalapeno with a splash of the juice and garlic

Great Northern is our go to bean. I guess it is tradition more then anything.
I love them and will hardly ever cook them the same way twice.
To me, the best way is with 1-2 inch pieces of leftover ham cooked with the beans at a ratio of maybe 25% ham to 75% beans.
I will use sausage and it is nice, but to me chunks of leftover ham is always better.
I hardly ever add other vegetables, since I really like the bean flavor, but we have added carrot, celery and onions to the pot and the result was good.
For us, an absolute must is cornbread cooked with 60% white self rising cornmeal and 40 % self rising flour and enough buttermilk to make batter, into a well oiled skillet. You have seen probably too many photos, but I have no sympathy, so here:
I will choose cornbread over rice every time, but that is just me.
We had them last week, but you have thrown a craving onto my back, so I am now at a loss as what to do.

Navy beans or great northerns. And I beg you all to try shrimp in your white beans....the savory slightly funky taste of dried shrimp, added once the beans are mostly tender, or succulent fresh peeled small shrimp tossed into the pot after the beans are completely cooked (simmer a bit longer to cook the shrimp). Toss in a bunch of chipped green onions. A drizzle of good olive oil atop each serving makes em even better.
Some folks tart up shrimp and white beans with a little heavy cream, but that's guilding the lily.

2-3 slices of Salt pork fried/rendered in a tad of bacon grease. Saute vegetables in the drippings.
Seasoning meats can include any or all of the following
Ham trimmings from a smoked ham, tasso, andouille, smoked sausage(at times)in addition to the bacon/salt pork.
Green onions and parsley to finish.
S&P(black/white)and cayenne to taste.
