2nd Boil

I'm good with boiling one sack. My recipe is like most of the posted ones and they always come out great. I've never had to do 2 or 3 sacks, but next weekend I'll need to do 2 sacks. How do the boiling masters adjust water, spice etc? All my sides will be done in the first boil, so that's not an issue. Thanks in advance for any help.

Halve all the spices (generally), everything else exactly the same.

Also:

I always do half my sides in the first sack and half in the second sack.

That's how I've been doing it for over 4 decades and haven't had any complaints.

I have only done 2 sacks a few times and one problem I have found is that the crawfish in the second sack will appear darker and come out harder than the first batch. It makes zero sense to me.

I've never had that problem. Odd.

Just make sure you clean them enough and bring the temperature of the water down sufficiently for the soak, I guess.

I just dont put quite as much seasoning. I wont say half because I put more than half.

But after the second sack dump that water and start over.

Yeah I dont get it. It almost seems that almost right after I put the second batch in they get this darker red color to them. I just chalk it up to weird crawfish.

That's what I do too. Start with a fresh pot after 2 boils, but we usually have no less than 2-3 pots going at one time when there's a big gathering of family, so it doesn't happen often.
