I've been putting a scoop or two of homemade mashed potatoes in my chicken and sausage gumbo. Now, if I am preparing a seafood gumbo, I'll stick to the traditional white rice method.
ETA: It started when I was visiting family in Vermont during the wintertime. We went to the store to get a few of the ingredients and I am almost certain the cashier misplaced the bag of rice. So, when I was almost done cooking the gumbo roux, I noticed the rice was missing. Well, so I whipped up some buttered, homemade mashed potatoes really quickly and poured the chicken and sausage gumbo over the potatoes. Is it traditional? No. But it is absolutely delicious. I've been doing it a good bit ever since.

Yes! Scoop in the middle of the bowl. Instead of rice.

An elder friend of mine had Tolkien and CS Lewis at his home as a child for dinner as his parents were professors at Oxford at the time.
