I made Cucos black beans for Cinco the Mayo.

Back in the day, and before there were Mexican joints on every corner, Monroe had Cucos. It was a popular Mexican restaurant/bar/ hangout for many years. We would often go there, drink and eat before walking across the street to party down at Sal’s saloon. The food overall at Cucos was great. But the black beans were out of this world. I’ve often thought of those black beans and a while back got the better half ask the folks on Spacebook if anybody had the recipe. A former employee eventually posted the following. Last Tuesday I made them and it turned out great. I thirded the recipe, as the following makes a lot of beans. Anyway, here it is if anybody wants it. It’s legit.




ETA- I did not do the refrigerator part. Just made it all in one day after soaking the day prior

Did you third the seasonings as well? Some of the ingredients don't seem like very much for 3 lbs of beans.

No. I mainly just thirded the beans lol. I seasoned everything to taste, but it was more than a third of that

Blast from the distant past. Cucos had it going on in the ‘90’s.
