Why are cellphone options so limited in US?

I'm looking to upgrade my Pixel 3 and basically my only options in flagships or good midrangers are Samsung Galaxy (S20, FE etc), Pixels (5, 4a, 4a 5G), iphone, or One Plus.

Not interested in crappy US variant Motorola's or Nokias

Not really loving any of these. There are so many more good options in EU or Asia like Xiaomi, Huawei, etc . The Redmis, Oppo Reno 2z, One plus Nord, Honor V40, Xiaomi Mi 11, Xiaomi Mi Mix 6, Vivo X50, etc etc

All of these are great phones for much less than iphone 12 or Galaxy S20.

Will we ever get more options here?

No, because we try to lock Chinese government run companies out of the USA.

Why doesnt Europe seem to care about Chinese companies? I personally don't care if my phone is Chinese...I owned an Honor 8 when they were still in the US market and that phone was awesome, plus it only cost $300

Europe doesn’t care as much until the US gov butts in and tries to tell them not to do stuff like when they are installing Chinese 5G equipment. We seem a lot more worried about them putting back doors in their tech to sabotage and steal shite from us.

Be careful what you wish for.
China has been called the Sleeping Giant for a reason and that giant is now fully awake and dominating the world manufacturing landscape.
China is not a free nation. They are a Communist nation run by some very bad actors who couldn't care less about human rights.
There are reasonable opinions that China might have developed and released Covid-19 by design.
The U.S. has had an ongoing trade deficit with China for many years in part due to China's manipulative trade practices.
China also is a well documented thief of technology throughout the world.
President Trump had placed tariffs on Chinese products to somewhat level the playing field.
China produces roughly half of the world's personal protective equipment (PPE) yet in Sept. of last year they were buying up PPE from international sources.
The virus escaped or was released from a government lab in Wuhan and their government remarkably was able to contain the virus within that area to the extent that the effect of Covid-19 on China has been minimal; China a nation of over a billion people and one of the most dense population on earth.
Yet they allowed international flights from Wuhan which ultimately infected the entire world creating a global economic crisis.
President Trump has since been voted out of office and China comes out spelling like a rose with glowing support from Democrats.
But yea, you personally don't care if your phone is made in Communist China which is exactly what their Communist leaders want.

What is your definition of “good” when it comes to phones?

Those other phones may have the specs but you’re dealing with nightmare software QA and possibly getting chips with Chinese Skynet installed on them.

Stick with US, Japanese, European and South Korean companies.

Honestly it’s horrifying how many Chinese IoT devices we have deployed out there.
