Just ground up nearly 17 pounds of brisket

Last week, Albertson’s had brisket for $1.57 per pound with $25 purchase. I did buy one of those and smoked it.
This week, they have them for $2.99 a pound (still a good buy).
I bought two today for $60. After trimming them to a 85/15, I ended up with 16.5 lbs (eleven 1.5lb bags).
I’ve never tried a brisket burger, and I gotta day Wow!!! It has a completely different taste.
This may sound weird, but it tastes like a “Ground Pati” hamburger (that’s a good thing).

We grind brisket with our venison now.

OP- I agree brisket burgers are very good. You should try it with short rib if you have the opportunity.

Put some BBQ sauce on it and you have a chopped BBQ sammich. Did this last night but instead of putting it on bread I spread it on some butter potatoes with field peas and corn bread. Heaven.

As someone said, I trimmed all the fat, weighed the meat, then added the fat back to get a 85/15 ratio.
I threw away about 3 lbs of fat.

Best burger I ever had was a combo grind of brisket, short rib and chuck. Life. Changing.

Please for the love of God and all that is holy...post on here when you see them on sale again. We don't have an Albertson's around us but 2.99lb I'll drive to one.

$2.99 is the current sale price (sale started yesterday and goes through 7/7), at least according to the sale ad I picked up at a Baton Rouge Albertson's yesterday. Says $2.99 whole beef briskets sold in the bag. Ad says they're not giving rainchecks though.
