New York strip. Just the right amount of fat (for me) . Usually cut around the portion size I want. I take mine blue rare.

Bone in rib eye cooked medium rare with a nice crusty sear on the outside.

Used to be a prime ribeye
The older I get the more I enjoy a good NY strip. Also a salt and peppered flank steak on a screaming hot grill for about 30 seconds per side with a lime squeezed over it is hard to beat. I just wish it still cost .99/# instead of 8.99/#. We need the hipsters to undiscover it.
