Similar to hog from what I hear. It does need to be cooked thoroughly because, as with pork, it can contain trichinosis. The fat can also be rendered and used for a variety of other applications.

Friend of mine saw one crossing the road on 955 by old scenic near Zachary recently. Would hate to hit one of those things driving home at night. Hate those things.
