This is one of the most popular ones in Paris. I had a chef make it for me today. This Youtube recipe is really really good.

I have a bakery by me called Mille Fuielle that obviously makes these. They’re damn good and now I know why they’re expensive.

Seems like you could just make that with frozen phyllo if you don't feel like going through all the dough shenanigans.
