Chicken and Sausage Gumbo Tonight !

Came down for a long weekend at the in-laws and walked into the kitchen to a giant pot of chicken and sausage gumbo and some homemade potato salad. Life is good! Yes it is.

Whoever doesnt put their potato salad in their gumbo isn't Cajun baby!

the potato salad has to be homemade and also made the right way. Most store bought potato salad is made with miracle whip, usually to sweet, and generally the wrong consistency to put into gumbo. This has been my experience, just saying..

Robert Fresh Market on Highland in BR does a killer "Cajun" potato salad. They do a few versions of potato salad, but the Cajun style is perfect in gumbo.

This thread has me wanting a gumbo!

born in St Landry and more often than not baked sweet tater in my gumbo. Tater salad is good too though
