OP, like others have said, take your time and enjoy the ride. You'll rarely come across a game like this.

If you can put the time in you're cheating yourself not playing on death march or the 2nd difficulty. It's a button masher with a good story on the lower difficulties.
That said I started on death march and ended up on sword and story. I'm just not putting that much time into a game. It is my all time favorite still, topping ocarina of time for me.

dont feel bad you arent alone.
I never played Skyrim before a few months ago(just started a relationship when it initially came out and I am not known for multitasking)
I never played Witcher 3 either and just got the complete edition with that online sale soo we will go through it together.
