Prevent Gumbo Spoilage

Why do seafood gumbos spoil? What do you all do to make sure it doesn't happen to you? I've never had one spoil on me but heard horror stories and want to make sure I steer clear

Stay to hot for too long.

Typically if the pot is too deep it takes a while for the bottom to cool down.

When we've used a big kettle to cook a lot as it cools down go and stir periodically to cycle the layers and get the heat out the bottom.

Only time I've seen it spoil is when someone put a pot in the fridge with the lid cracked. Bottom layer took too long to cool.

Portion it out into smaller containers as soon as you can. It will cool enough to get into the fridge much faster so it doesn't spoil on you.

If you leave it in the pot, it can sit there warm long enough to spoil.
