They called it a fast food type restaurant, but making salads is very labor intensive, compared to making burgers/sandwiches/ hot dogs or whatever and produce isn't cheap either, and it has a short shelf life. Last night for dinner, we had red beans and rice and salad. The ingredients for the salad cost 4x what the ingredients for the beans, sausage and rice were, and then there was a lot of chopping and slicing involved.
I love a good salad and vegetables, but that would be expensive to eat out for lunch every day, and somebody who owns a place like that, doesn't need to be preachy and alienate potential customers, even though he is right about the obesity problem in the U.S.
