Don’t want to break the bank but I’m willing to pay for decent equipment. I’ve only used baitcasters before but I understand that a spinning combo has a greater reach. I’m willing to learn how to throw a spinning reel.

Where are you staying? If you are staying in Plantation go to the government cut and fish.
Get a cast net and catch croakers or finger mullet. There are bunches of flounder in the cut.

Go to PensacolaFishingForum.com and search around. They are more familiar with the area you are looking to fish and the equipment you want to fish with.
You are on the right track with a long pole (7'6" - 8') and spinning reel. How big of a reel and how heavy tackle you are looking to throw probably needs to be figured out.
